Kay was born in Chicago and after she graduated from Parsons in the late 1960 she worked as an apprentice with Geoffrey Beene and after a year with them she began to develop her own line. Her focus in the fashion industry would be directed to designing clean dinner dresses. In the year of 1972, she founded the Gillian Group with the help of her two partners, Jon Levy and Howard Bloom. She began selling her dresses under the Gillian label the group along with its varied divisions would quickly become one of the main suppliers of women's apparel in the United States. Kay started the Phoebe company just two weeks after the Gillian group closed and this is where she began to establish the line that will bear her name, Kay Unger New York. Her line was unique in that it offered women different color alternatives to the common little black dress and other fashions that were the "norm" at the time.
